    Cherry tomatoes sauteed in olive oil with garlic served over vermicelli. Done in 5 min!

    I have 2: broccoli, spicy sausage, and orecchiette; or penne, canned tuna, capers, and lemon. Both with lots of olive oil and Aleppo pepper.

    My go to easy pasta dinner is a (probably not very authentic) Bolognese, I made one yesterday and it will feed me and the hubby all week. Chopped onion, mushrooms, minced beef, beef stock, garlic, chopped tomatoes and passata and simmered until it reduces and thickens. Serve just enough sauce to coat the spaghetti, I stir it into the pasta in the pan to make sure it's all covered, all the flavour but keeps the calories lower so I still get to have my pasta fix!
    Would love to learn to make a more traditional authentic Bolognese.

    Smoked salmon linguine. Saute in olive oil some red onions, halved cherry tomatoes capers and smoked salmon. Add the cooked linguine and allow it to absorb the olive oil and mix with the salmon onions and capers. so fast, so good.

    My family's go to recipe is two tins of quality Italian tomatoes, sautéed garlic and anchovies, basil, S&P. Stir through cooked pasta and top with freshly shaved Parmesan. Simple is best!

    Drunk's Pasta- you can make it even when you're a bit under the weather after a cocktail or two- saute chopped leeks or onions, 1Tbls baby capers, 2 Tbls chopped sundried tomatoes in oil, two Tbls stock or water. Bring to boil. Add half a chopped camembert or brie- skin and all. Turn off heat and cover. Cook fresh spaghetti. By the time this is done and drained the sauce is ready. Stir well and pour over pasta. Serves 2. Yum.

    I love angel hair with salty browned butter, a tiny bit of lemon flavored olive oil, grated Parmesan cheese and cherry tomato, finished with fresh chopped Italian parsley. I've kept this a guilty secret because it sounds so odd!
