Weeknight Vegetarian

Weeknight Vegetarian gives us the tools to put a delicious, wholesome meatless meal on the table on any schedule. It offers quick, easy, and healthy meatless dinner ideas for any time of the year, with dozens of choices for any occasion. You can learn more about author Ivy Manning’s inspiration for the book in our author interview.

Organized by season, chapters open with advice about the fresh ingredients and cooking methods best suited to the time of year. Clever tips throughout offer enticing ways to round out meatless meals, customize recipes to personal tastes, menu planning strategies, and helpful ideas for turning leftovers into new suppers later in the week. 

We’re delighted to offer three copies of Weeknight Vegetarian. The contest is limited to EYB members in the United States and Canada. One of the entry options is answering the following question in the blog comments:

    Shredded zucchini sautéed down with garlic and mint, then smoothed out with lebneh, lemon juice, bit of the pasta water (boiling adjacent) and served over any shape pasta. Wonderful.

    Angel hair pasta with homemade red sauce. We belong to a CSA and put up sauce during the height of the harvest season and enjoy the fruits of that labor all year long.

    Pasta aglio olio. So quick and customizable depending on what you have on hand – marinated artichoke hearts, sun dried tomatoes, mama lils, cooked beans, herbs, olives, capers, leftover cooked veggies etc. Different every time!

    I can always pull together spinach and chickpeas in a tomato garlic sauce that includes smoked paprika. It's quick and a little spicy, and any leftovers are great for lunch the next day.

    My go-to weeknight vegetarian meal would have to be portabello mushroom caps stuffed with quinoa or buckwheat groats, farmer's cheese, onions, and red peppers. So tasty and easy!

    I love to use of bits of leftovers (greens, beans, mushrooms, etc.) and the last bits of a bag of tortilla chips to make chilaquiles, then top it all with a cheese and a fried egg.

    My go-to vegetarian dish, at least this winter, is a coconut milk curry with winter squash, greens, and tofu. It always comes together much more quickly than I expect.

    I am also a proud member of the "put an egg on it" club, so if I'm not up to cooking anything complicated I will happily eat greens on toast with egg, roasted vegetables with polenta (or grits) with egg, or pan-roasted potatoes with smoked paprika and egg.

    Pickled veggies; Moroccan carrots, dilly beans, asparagus, green tomatoes, cauliflower, caper berries etc. with a scoop of goat cheese & good bread. Cleanup is quick, back in the jars and screw lids on.
