Cookbook giveaway – The VB6 Cookbook

    Sorry, I think your contest question is not reflective of Bittman's philosophy. I don't have a favorite "vegan main dish", but did thoroughly enjoy walking in the veggie garden yesterday, collecting romaine leaves, sugar snap peas, beets, and pansy blossoms for a delightful salad served with canned garbonzo beans. Vegan is elitest; my preferred label is appreciative consumer of Mother Earth's delights.

    I haven't really eaten vegan. Most of my favorite veggie recipes are ovo- lacto. I'm interested in seeing the recipes Bittman includes in this book.

    I'm not a full-time vegan but I appreciate the direction Bittman is taking with the "flexitarian" approach. My favorite vegan recipe is one I found on the blog Eating for England. It's a quinoa salad with black beans, avocado, and a cumin-lime dressing. It's quite addictive ๐Ÿ™‚

    I'm not vegan, not even vegetarian, but I cook for one! One of my dishes that I find worth the effort when I cook for the veggie son is Sweet and Sour Eggplant Stuffed Cabbage. I was looking for something different to make him and decided to do a veggie version of the old meat stuffed cabbage I remembered my mother making. It was an instant favorite and damn, it tastes good.

    Ummm – I don't have one – although I wish I did. Maybe if I win this cookbook, I'll have a few new favorites. I certainly would like my family to eat less meat and I think the flexitarian approach is probably the most realistic for us.

    I am not a vegan but I do like to have some vegan recipes on hand. I have a new blender and I love my vege smoothies and I am also growing and using wheatgrass, so some mornings I have a carrot, beetroot and wheatgrass smoothie. But for a main meal you can't go past a pizza with the base made of cauliflower and topped with tomato onion and basil

    I am not vegan but spent several years trying to cook for my formerly vegetarian son and his girlfriend when they visited. I actually found lots of dishes the whole family loved like a vegetable casserole topped switch rosemary biscuits from Epicurious. Now they are into Paleo but I grow and love veggies so I am still on the lookout for new ways to prepare them.

    I love many vegan dishes but struggle to find fully satisfying and truly delicious vegan "main" dishes. Ellie Krieger's Five Layer Mexican Bean Dip (minus the 5th layer of cheese) over brown rice is one of my go to vegan dishes but I need to expand my repertoire.

    Black bean soup. I love veges and since I am allergic to milk products, I generally have been eating vegan and do not eat a lot of red meat I have been eating vegan befor 6 and for at least one day a week for years. I never thought of it that way. With EYB giving me more access to my cookbook collection the diversity of what we cook at home for dinner has grown to where my meat eating husband enjoys going meatless once a week or more for dinner.

    My favorite recipe that fits the 'vegan' designation is accidentally so- "Thai spicy beans"- adapted from a magazine. It has red curry paste, coconut milk, lime , beans (any kind) and veggies- I usually use carrots onions and tomatoes. Potatoes or sweet potatoes in winter, peas or green beans in spring. This is the meal most requested by my vegetarian daughters.

    I just don't think about eating vegan. I eat plenty of dishes that are vegan but I would consider them sides. I eat a lot of salads for lunch and that would probably be my favorite. It would be nice to see this book.

    Hmmmm … I don't make vegan meals too often (I cook lots of vegetable centric dishes, but often with a scrap of meat or cheese or fish sauce/anchovy for extra flavor). Two that stand out in my mind are rice and dal (lots of yummy variations) and pasta with broccoli rabe and garlic (top it with garlicky breadcrumbs instead of cheese).

    A stuffed pepper recipe I adapted from the Washington Post: peppers stuffed with a mix of breadcrumbs, onions, garlic, olive oil, gardineria, capers and olives, on a bed of and topped with chopped (canned) tomatoes. OK, so I used cheese, too. So it's vegetarian, not vegan, but I suppose I could have used tofu cheese as a binder.

    while this may not qualify as a main course — we along with our rescue doggies enjoy mashed roasted cauliflower with onions and peppercorns — topped with either stewed tomatoes with oregano or with steamed carrots (sometimes we mash them too) — doggies do not get any with onions — other favorite is roasted carrots or sweet potatoes casserole baked with top crust of walnut meal — gosh we could go on and on — gotta run to the kitchen and find something . . .

    Asparagus, gently sauteed, then given a miso-ginger sauce, and served however (rice, quinoa, with toast). Not much protein, but the miso-ginger-asparagus triad knocks my socks off.

    My favorite vegan main course is a Vegg Salad sandwich. There are so many reasons why I love this so much.

    1) Itโ€™s pure comfort food, reminiscent of the days I ate dairy
    2) I like eggs, but donโ€™t like eating food that forces animals to have inhumane living conditions
    3) I like messing with people. With my recipe, people never know theyโ€™re eating a vegan Vegg Salad Sandwich. I usually donโ€™t even tell them (as Bittman quotes in your interview), or I wait until theyโ€™re done eating and THEN tell them. Itโ€™s entertaining to watch the look on their face. ๐Ÿ˜‰

    Hard question. It varies from time to time but right now I think my favourite vegan recipe might be chickpea pilaf that is topped with tofu bacon. (It was not clear if the giveaway is worldwide but as there is no note it isn't then I assume it is – would love to win this book – just off to read the interview with Mr Bittman whom I always find interesting)

    There is an amazing vegan tofu quiche recipe on Heidi Swanson's 101 cookbooks. It's fabulous. Flavourful and warming. I believe it's tofu with spinach and mushroom… I would recommend it to EVERYONE!

    I've always loved this vegan curry I make with sprouted garbanzos, sprouted red lentils, sprouted aduzki beans and some sprouted peas. Add some currants and cashews and I serve it over brown rice. It's easy to substitute anything or throw in any leftover veggies from the fridge.

    Hands down, my favorite is enchiladas michoacanas. Corn tortillas bathed in a beautiful rich dark red sauce made with a variety of dried chiles, filled with potatoes, carrots, onions, tomatoes and zucchini. Lined up and topped with shredded lettuce and more of the filling.

    Quinoa, puy lentils, pistachios, pine nuts, pumpkin seeds, dried cranberries, fresh coriander leaves, continental parsley, mint, dressed in yoghurt, Harissa & lemon juice.

    I love just about anything made with tofu or tempeh, like stir-fry dishes or mock tuna salad, or tofu/tempeh just marinated and baked.

    I recently discovered a recipe for beer-battered tempeh that is not low-fat at all, but it is really, really good. Cut the tempeh into bite-sized pieces, steam it, whip up a beer batter, coat the pieces, and fry 'em. Throw them on top of a salad or a stir-fry and you've got dinner.

    Hmmm…maybe that's what should be for dinner tonight.

    Chickpea pot pies which contain chickpeas, spinach, tomato, pomegranate molasses on the bottom with mashed spud incl. garlic on top. Very yummy

    Kung Pao Tofu for me. After draining the tofu and then letting it sit in soy sauce, I'll lightly dust it in corn starch and shallow fry in the wok. Then, quickly stir fry carrots, celery and water chestnuts, add in peanuts and chili, then add the tofu back in along with a sauce of rice wine, hoisin, soy, ginger, garlic and some water to cut the saltiness. Thicken just a bit with corn starch and serve with rice. I don't think of it as vegan at all, just a good Americanized version of a Chinese food. Crunchy except for the Tofu and rice.

    I love my vegies, so I often eat vegan/vegetarian meals. A regular vegan favourite (I make it at least fortnightly) is a Pumpkin, Cauliflower & Chickpea Curry, served with brown rice.

    My take on an Afghan dish- eggplant in a tomato sauce, lentils, and brown or basmati rice. But I love it with yogurt sauce–will have to find a good replacement!
