We’re very pleased to be able to offer 10 free copies of a new cookbook by one of the legends of the culinary field, Patricia Wells. Her new book,  French Kitchen Cookbook: Recipes and Lessons From Paris and Provence, has its basis in her famous cooking school in Provence.  We had a chance to discuss her passion for food and delight in teaching students – you can read her insightful comments here. 

 

 

 

 

In her discussion, she shares her most important rules for students. To win one of the cookbooks, just post a comment below answering the question posed in her first lesson, How to Begin:

I tell them to sit down and make a list of the ten things they most love to eat. It may be French fries or a lemon tart. A perfect puff pastry or chocolate cake. I suggest the list be varied (not all desserts, please). Then, as though you are a pianist learning to play a piece of music, you cook, cook, cook!–practice that first recipe until you feel you have mastered it, or at least have made it taste as good as you think you can at this point. Then move on to the second recipe on the list, and so on. By the time you have reached the tenth recipe, you will have a basic repertoire. Then, of course, make another list of ten and continue the process.”

So we’ll pose the same question – though you don’t have to list 10 items: What is the one thing you most love to eat?

    Love anything with tomato and basil, can't get enough. This may sound strange, as I am for the most part vegetarian, but I sometimes crave a good sausage/meatball and mash potato.

    It does depend on my mood, of course – sometimes a simple green salad, or a few roasted nuts, can be exactly what I want to eat.
    But a definite favorite of favorites is roasted chicken, using the Zuni cafe recipe.

    The one thing I most love to eat is Baked Stuffed Lobster. A full-blown no holds barred jam packed seafood stuffed bonanza of briny buttery shrimp, scallops, crab and lobster meat . Embellished by crumbled Ritz crackers with chopped parsley and tarragon. Gilding the lily with melted butter, lots of it. This is the only dish that makes me want to swoon.

    This is…really hard. Could be a perfect hamburger, or a perfect salad with toasted seeds, pickled onions, and beets. Or a bowl of ramen with marinated soft-boiled eggs. Or really fresh nigiri. But sometimes pulled pork is what I most want. And sometimes I just want a crumbly aged Gouda with a dark Belgian beer and crispbread. Don't make me choose!

    This changes frequently but my current "cant get enough of it" food is taosted sourdough bread, drizzed with olive oil, topped with roasted tomatoes crushed into the bread and finished off with some fried halumi cheeze. YUM!

    It's funny, I was just thinking about this question this morning but more in terms of the eating. It's impossible to choose one thing and my moods change, but top on my list would be fresh oysters on the half shell (which, of course, there is no recipe for other than obtaining the freshest & most delectable oysters!), Caesar Salad, Moroccan Tagines of all sorts, melt in your mouth sablés, tuscan olive bread, shrimp stuffed with crabmeat, banh mi sandwiches, cassoulet, babka, …. I could keep going…

    I love to eat, so it is difficult to name just one item. But for breakfast, I'd like a chocolate croissant. For lunch, a piece of in season fruit: peach in the summer, orange in the winter. For dinner, an entree featuring some type of protein, lobster is probably on top of the protein list.

    My mother's Pennsylvania Dutch cheesecake with a zwieback crust and NO lemon zest: the cream-cheese-and-egg filling is flavored with almond extract, and the sour-cream topping is flavored with vanilla extract. A thin sliver of this delight requires no garnish at all.

    Bruschetta (with lightly stewed tomatoes) – works as a snack or a side for a meal, and quite frankly any time of day, even breakfast like Spanish pan con tomate.

    Peking Duck with pancakes and plum sauce. I'd happily eat the whole duck! Tried making an authentic version many years ago. It was a great success, but tooke 3 days to make! Don't think I'll bother again.

    The favorite thing to eat is so hard to choose – but a chanterelle mushroom comes to mind……and carmelized shallots with soft warm goat cheese…..chassagne montrachet white burgandy to sip and simmer…..with roasted chicken, spinach or chard….deep red cherries…….and well we would have to have some bread for dipping up the sauce just created….and ..more cheese….fig jam….and valrhona chocolate ……tres delicious!!

    I love soup! I find that I am always drawn to recipes that give a new twist to an old favorite or that use seasonal ingredients that I am trying to make use of. It is such a comfort food and after making homemade soups I find it is almost impossible to enjoy the canned soups I liked as a child. One of the ways I judge a potential cookbook purchase is to flip to the soup section and see what it has.

    really good dark rich rum or single malt whiskey soaked, christmas fruit cake laden with authentic dried fruits and nuts ( no glace or candies fruit) with a slice of so old it crumbles cheddar cheese. Savoured, slowly, aromas textures and taste melting together in your mouth. Heaven.

    What ever I just ate may be my most favorite. We just had wonderful Alaskan halibut with pesto, that I defrosted from fall harvest, along with the last of our beets. I had the chance to cook with Patricia Wells in Provence, and my biggest takeaway was to taste and select the very best ingredients. I still try not to head to the market with a recipe in mind, but vice versa. Thank you PW. You took my cooking to a new level with a simple learning. YUM!! PS: My mother laughed when I told her about "mise en place", a fab cook in her own right, she said she taught me the very same long ago….Thanks, Mom!

    My love is bread. I make artisan breads. A crusty loaf made with a biga that's been left to ferment a couple of days is true heaven.     I love to eat what I call "Bottom Up" food, rather than "Top Down" food.
    Bottom-Up food begins with a quality, fresh ingredient (i.e. a chicken or a particular vegetable) the flavor of which is then simply enhanced in the cooking process but not over-powered- it is still essentially about the main ingredient. Top-Down food is the antithesis of this, when the dish becomes essentially about particular seasonings and sauces that have been added to the main ingredient, overpowering it. French and Italian cuisines are examples of the Bottom-Up way of eating that I like.

    Oh yes, and anything made with yeast, preferably sweet. One followed by the other, now you are talking.

    Warm apple dumpling baked in a cinnamon syrup served with cold heavy cream. The pastry is half crisp half soft and the contrast of hot syrup and cold cream is a delight for the senses. It's my ultimate comfort food dessert!
