Keeping guacamole fresh w.o. pits, plastic wrap, or more lime juice

The Kitchn recently appears to have solved one of those very annoying kitchen issues – how to keep guacamole from turning grey. In The Best Way to Keep Guacamole Green, they reveal that:

“All you do is cover the guacamole with a thin layer of water. 

OK, you say, this sounds weird – maybe even gross. Water on the guacamole? But water is a perfect barrier against oxygen, and since guacamole is dense, a little liquid won’t water it down. I pour in a small amount of water to cover the top of the guacamole and refrigerate it for up to three days. After I take it out and pour off the water, I stir up the guacamole and the texture is no different than when it was made. In fact, I like the taste of guac after it has sat in the fridge overnight; I find the cilantro and onion flavors are blended better.”

We must admit we haven’t tried the technique, but it makes sense and it would definitely be helpful to be able to make guacamole ahead of time.     Bi-Rite grocery is doing something similar — they sell their ready-made guac with a 1/3 inch layer of salsa on top. Like the water, this keeps air away from it.

    I have not tried the water method yet, but that's a great idea. I have read about squeezing lemon or lime on top, but I don't get consistent results. Olive oil works, but the avacado is oily enough already. Another source advised saving the pit and submerging that in the guac while storing. Has anyone had success with that method?

    Mama, if you follow the links, the "pit" method is pure bunk. Lemon or lime juice, if anything, makes the guac brown faster.

    I have done fresh salsa on top too, I just stir it in and get even better guac the next day!

    My brother tried this and all the water integrated into the guacamole and made mess. However he does not use any added oil in his recipe which may be why he got no separation between the guacamole and the water.
