  Bread pudding, semolina pudding, and recently I found how easy it is to use gelatin (for instance to make panna cotta). I could use some inspiration to actually make them, because it always feels like it's going to be a lot of more work than it actually is.

  I have not. But two beautiful ceramic molds that will be perfect for these puddings just arrived from William Sonoma yesterday (they were on deep discount!). This book is designed for my bookshelf, one way or another.

  I have, but it's been a very long time. I used to make good old Jello molds loaded with fruit or vegetables, plus unmolded puddings of all sort. Maybe it's time to get back into it.

  I've started a tradition of making a maple-vanilla custard pudding every Christmas…it's a nice gluten-free alternative to all the cakes and pies!

  If so-called Indian pudding counts–you know, cornmeal and molasses or maple syrup baked at a relatively low temperature for a long time–then, yes (that's what I'd consider "traditional," anyway, where I'm from). The jasmine version in this book sounds delightfully intriguing, though–and I hope a recipe or two with rosewater is included.

  I regularly make rice pudding, but not generally with cow's milk as I'm lactose intolerant. I sometimes use coconut milk, sometimes almond milk, both of which give good results. Soy milk doesn't seem to work well, it seems to separate and go grainy.

  I love both American style custard puddings and what I tend to think of as pudding i.e. basically steamed cakes, especially Christmas pudding which we make every year.
