Jane provided EYB with an excerpt from the cookbook that offers many great baking tips; you can read them here.     I would love to master Profiteroles and temperamental choux pastry. Unfortunately this is a treat that I must go out to enjoy, as I failed miserably years ago when I had a pregnancy craving for those delicious mouthfuls. Choux Pastry would also make Croquembouche a possibility………!!!
