Totally Kosher: Tradition with a Twist! 150+ Recipes for the Holidays and Every Day by Chanie Apfelbaum is filled with recipes that will tempt all. At first blush, I was inspired by the Knafeh pancakes, PB & Banana muffins with oat streusel, Bubby’s challah kugel, waffled, Spatchcock sesame chicken and my favorite recipe Rainbow cookie mandelbroit.
I am neither Jewish nor Kosher but I am holding onto this inspiring cookbook. I want to keep all the cookbooks, but I must make serious choices and typically a Kosher book wouldn’t take up valuable real estate in my stacks. Stacks is the word used to describe the book storage area in a library and not the reading area, but my office is the literal interpretation of stacks. Dangerous, often leaning, Jenga-styled stacks which makes me grateful not to be living near a fault line.
Back to this amazing book, most have heard of the fried pickle, right? How about Fried cornichons with sweet chili dip? Many bake a brie around the holidays to impress guests but here we have a Garlic knot crown with brie and tomato jam. The brie is nestled in the center of the pan (topped with tomato jam) and surrounded by homemade garlic knots – guaranteed to knock your guests socks off. Every time I turn a page – I find something else to mark to make – Elote schnitzel subs, Smashed falafel or Sweet noodle kugel latkes with bourbon raisin jam. This book is a keeper.
