Joe Thottungal was born in the State of Kerala in South India and in 1998 immigrated to Canada. He is now the chef/owner of Coconut Lagoon and Thali Coconut Lagoon in Ottawa where he displays his talents and showcases the exclusive cuisine of Kerala with a modern twist.

His debut cookbook (released in Canada in May and in the US this month) is a collection of 80 easy-to-make recipes designed with home cooks and the modern kitchen in mind. Coconut Lagoon features authentic regional dishes from Kerala such as mango pickle, dosa, Malabar parathas, biryani, Thrissur-style fish, and banana fritters, as well as more-widely-known Indian recipes that are loved around the world, such as chai, butter chicken, and poori. A handy section on ingredients, a resource list, and stunning photography throughout make this book a perfect fit for anyone wishing to tackle Indian dishes and has an appreciation for today’s kitchen. To me, the dishes here look cleaner and less muddled than some Indian recipes.

    I moved to Ottawa a few months ago and Coconut Lagoon receives high praise. Definitely on my list of places to visit.

    I’ve always wanted to tackle parathas. So I would make the Malabar parathas.

    Fingers crossed that I can compare my home version with the dishes served at the restaurant,
