New cookbook to aid Greek food relief organization
August 12, 2016 by DarcieReleased earlier this summer, the new book A Taste of Greece is more than just a cookbook. In addition to featuring fantastic time-honored recipes, it is also a fundraiser for a Greek food relief organization that is facing an ever-increasing need due to the refugee crisis.
The cookbook represents a collaborative effort between HRH Princess Tatiana, who has made Athens her home since 2013; Diana Farr Louis, a New Yorker who first came to Greece in 1963; and the Athens-based NGO Boroume (“We Can”). Founded in 2011, Boroume is the only nonprofit organization in Greece dedicated to reducing food waste and fighting malnutrition at the same time, by creating networks of food donors and receivers throughout the country. A Taste of Greece brought together well-known personalities from across the world – including EYB Member Laurie Constantino (tasteslike) – who all share a special bond with this ever fascinating Mediterranean country. The contributors have chosen to share their favorite local food recipes to give life to their personal connection with Greece and shed light on the nation’s multifaceted appeal. The recipes that Laurie contributed are Pastitsio with Greens (vegetarian), Mushroom Stifado (vegan), and Salmon Kleftiko (cooked in foil packet).
