Marcus Samuelsson’s 10 ways to use up Thanksgiving leftovers

We’re sure all our non-U.S. members are getting a little tired of our Thanksgiving blogs, but we promise this is the last one – it’s hard to overlook the one holiday truly devoted to eating. And for our final blog, what is more appropriate than one dealing with how to use up Thanksgiving leftovers? There’s a lot on the web about the subject, but we thought Marcus Samuelsson’s take was just a bit out of the ordinary.
Published in HuffPostTaste, his article, 10 Recipes, 10 Ways To Deliciously Use Your Thanksgiving Leftovers deals with all the ingredients of a traditional Thanksgiving menu. Among other ideas, he includes a Turkey Split Sandwich (with pickles!), Turkey Ramen, Cranberry Cornbread Trifle, Mac-n-Cheese made with stuffing, Turkish Candied Squash, and even a recipe for Glögg (a hot drink made with almonds).
Or, if none of these inspire you, here are some other suggestions for Thanksgiving leftovers available online and identified by the EYB library. We thought that Turkey Gumbo served with Mashed Potato Biscuits followed by a Pumpkin Pie Parfait sounded like a pretty good meal.
