Cookbook giveaway – The Power Greens Cookbook

The Power Greens Cookbook

In her latest cookbook, author and blogger Dana Jacobi expands your culinary repertoire and introduces her fifteen “Power Greens” – from arugula to watercress – that are loaded with health-supporting nutrients and phytochemicals. Jacobi also shares simple cooking techniques that help you prepare these super veggies quickly.

Kale and collards don’t have to be the only greens on your shopping list anymore. Rising stars include romaine and parsley, Brussels sprouts and beet greens, and more. Even though we know they’re good for us, many people are afraid that they won’t taste good. Fear no more! The Power Greens Cookbook provides go-to recipes that are both nutritious and delicious. You can get a sneak peek into the book with an exclusive EYB excerpt.

We’re delighted to offer five copies of the book to EYB Members in the US only. One of the entry options is to answer the following question in the comments section of this blog post:

What leafy green are you most interested in finding new ways to prepare?

Please note that you must be logged into the Rafflecopter contest before posting or your entry won’t be counted. If you are not already a Member, you can join at no cost. The contest ends September 5, 2016.

  • lindaeatsherbooks  on  August 15, 2016

I need to find ways to make kale tasty. I know it's super healthy, I'm just having trouble enjoying it.

I love arugula, but I usually eat it raw. I'd love some new ideas (and now I'm imagining a simple soup a la cream of spinach–but with arugula).

Parsley…I'm using it as a border on some of my raised veggie beds. What can I do with it?

  • earthnfire  on  August 28, 2016

    kale and broccolini

I'd love to learn how to cook Amaranth, I have a lot of it growing in the garden and never know what to do with it.

  • Jchristina  on  August 29, 2016

I grow most of the greens in the book in 4X4 and 4X6 raised beds. Cilantro hates hot weather and I harvested it three times before it bolted (and I harvested the seeds). I especially need cilantro recipes beyond the cilantro-jalapeno hummus and use up your herbs before they die green dressing!

  • sallyc06  on  August 30, 2016

Spinach, because its so good for us.

  • Sfgordon  on  August 30, 2016

I always enjoy cress when I eat it at restaurants, but it's never been something I put in my shopping cart at the grocery store. I would also like to get some good ideas for radish tops because I buy radishes regularly and I never know what to do with the leaves besides throw them in stir-fry dishes as an afterthought

  • Nancith  on  August 30, 2016

I'd like to see other ways to prepare Chinese greens besides the usual stir-frying, plus ideas for escarole.

  • DFed  on  August 30, 2016

Kale! We get tons in our CSA box & I'm always looking for new ways to cook it!

  • mfl  on  August 30, 2016

turnip greens. They add sweetness to a medley of steamed greens but I'd love some inspiration for other than steaming them.
